A main course in the style of the Mountains.
- Chanfana
The day before, the goat is cut into pieces and marinated in garlic and wine until the following day. When the sun rises again, the pot is placed on the fire and the goat meat, cloves, and bay leaf are added, and left to simmer. Halfway through cooking, a glass of brandy is added, the pot is covered, and it is left to simmer until the meat is cooked and the aromas of the brandy and wine have dissipated, a process that usually takes between five and six hours. Chanfana is served with boiled potatoes and a little parsley.
A typical dessert in Sertã
- Tigelada
Tigelada is a traditional dish from the interior of Portugal, and the Sertã region is no exception. This fantastic dessert begins by being prepared in a clay pot where eggs, sugar, and lemon peel are beaten together, then milk is added. Before placing it in the oven, the lemon peel is removed. The cooking time is around 60 minutes. After this time, it is removed from the oven and placed on the table where slices are cut directly onto the plate.
A great digestive aid.
- Strawberry Tree Liqueur
The strawberry tree fruit (Medronho) grows on trees that prefer the north-facing slopes of mountains to take root and grow. To make Strawberry Tree Liqueur, the fruit is fermented in wooden, clay, or copper tanks. Once inside the tanks, natural fermentation begins, lasting between thirty and sixty days. However, to achieve success, it is necessary to cover the tanks with crushed fruit to prevent contact with air. After fermentation, the product must be stored for sixty days and well protected from air. Only then will it be ready to serve.
This is an alternative for your digestive after a traditional meal.
